The first step is to understand what a whey separator does. Unlike a container-separator, which simply allowed milk to sit until the cream floated to the top and could be skimmed off by hand, these centrifuges use fast centrifugal force processing power to separate whey from butterfat. In addition to separating cream, a whey separator is also capable of removing heat-resistant bacteria and spores from milk. These can be dangerous to health and, due to their higher density than the cream, these contaminants are discharged during separation.
